Bacon and pork loin cuts are produced from whole pieces of pork meat, which have been infused with brine, tumbled, boiled and smoked. Bacon is made from pork belly (pancetta) with a ratio of 70% lean meat to 30% fat. It is available either in a slab or a roll.
Pork loin is from the back muscle of the pig. It is a naturally low-fat product. Smoking gives it a unique golden-red colour and a rich flavour. Bacon is commonly used as an ingredient in the preparation of dishes, while pork loin is an ideal deli meat served cold.
