The aubergine is grilled over a fire and prepared with oil, vinegar and garlic. This authentic favourite is offered both as a dip and a spread. There is the traditional type originally from Constantinople known as politiki or agioreitiki, and has the texture of a spread. The smoother type is a dip, contains mayonnaise and is lighter in colour.
